“Mitho Mava” is a popular Indian sweet made from milk solids, sugar, and flavored with cardamom. It is a traditional sweet often prepared during festivals and special occasions. Here’s a basic recipe to make Mitho Mava:
Ingredients:
- 2 cups of khoya or mawa (dried milk solids)
- 1 cup of sugar
- 1/4 cup of ghee (clarified butter)
- 1/2 teaspoon of cardamom powder
- A pinch of saffron strands (optional)
- Chopped nuts for garnish (such as almonds and pistachios)
Instructions:
- Start by grating or crumbling the khoya to ensure it’s in a fine, uniform texture.
- Heat a heavy-bottomed pan on low heat and add the ghee to it.
- Once the ghee has melted, add the grated khoya to the pan.
- Cook the khoya on low to medium-low heat, stirring continuously to prevent it from sticking to the bottom of the pan. Cook until the khoya turns slightly golden and releases a nice aroma. This should take around 10-15 minutes.
- Add the sugar to the cooked khoya and continue stirring. The sugar will start to melt and combine with the khoya.
- Keep cooking and stirring until the mixture thickens, comes together, and starts leaving the sides of the pan. This can take another 10-15 minutes.
- Add the cardamom powder and saffron strands (if using) and mix well. The saffron strands can be soaked in a little warm milk before adding for enhanced flavor and color.
- Once the mixture reaches the desired consistency (it should be like a soft, fudge-like texture), remove it from the heat.
- Allow the mitho mava mixture to cool for a few minutes, but don’t let it cool completely as it can become hard to shape.
- While it’s still warm, grease your hands with a little ghee and shape the mixture into small pedas (round discs) or any desired shape. You can also press chopped nuts into the pedas for garnish.
- Let the pedas cool completely, and they will firm up as they cool.
- Store the mitho mava in an airtight container at room temperature. They can be stored for several days.
